Our special line of Organic Artisan Pasta named "Single wheat" is made using very ancient varieties of wheat taht are nearly extinct.

Together with the University of Foggia we are doing researches to rediscover what we believe are some of the most precious and high quality types of grain.

Our aim is to educate consumers to recognize healthy products made following one simple principle: the usage of the highest quality ingredients. We are committed to safeguarding the Pasta from being contaminated by the industrial technology.

The varieties of wheat we are rediscovering are: Grano Mischio, Saragolla, Senatore Cappelli, Monococco, Tumminia.
